摘要
作为一种食品防腐剂,ε-聚赖氨酸抑菌谱广,水溶解性强,安全性高,在高温下稳定,pH范围宽,目前作为食品防腐剂被越来越多的采用。本文综述了ε-聚赖氨酸的研究现状及作为食品防腐剂的潜在应用前景。
As one kind of food preservative, ε-polylysine shows anti-microbial activity with a wide spectrum and within a wide pH range. It has been increasingly used as food preservatives nowadays. This paper reviews the researches on ε-polylysine and the potential application of ε-polylysine as a food preservative.
