摘要 应用磷脂酶Lecitase Ultra的酶法脱胶是植物油精炼未来发展的趋势,Lecitase Ultra催化反应需要金属离子的激活。对常见金属离子和表面活性剂对酶法脱胶过程的影响进行了系统的研究。金属离子中,Ca2+和Mg2+对Lecitase Ultra的催化具有激活促进作用,Fe3+和Cu2+具有较强的抑制作用,而Zn2+的作用与所添加的浓度相关。0.1%加量的Triton X-100、Tween 20、Tween80、Span 40和Span 80都不同程度地提高了脱胶效果,其中Tween 80和Span 80的提高幅度较大。 Enzymatic mental trend of plant oils degumming using a novel refining in the future. The phospholipase Lecitase Ultra will be the developeffect of metal ions and surfactant on the enzymatic vegetable oil -degumming process was studied. Some metal ions were required to active Lecitase Ultra to catalyze reaction. The reaction of degumming process catalyzed by Lecitase Ultra was stimulated by Ca^2+ , Mg^2+ and was inhibited by Fe^3+ , Cu^2+. Otherwise, the effect of Zn^2+ depended on the additive dosage. Triton X - 100, Tween 20, Tween 80, Span 40, Span 80, with the additive dosage 0. 1%, could improve the degumming process, amd Tween 80, Span 80 were more effective.
