荚膜红假单胞菌类胡萝卜素的稳定性能初探 被引量:1

摘要 从荚膜红假单胞菌细胞中提取类胡萝卜素,探讨光照、pH、金属离子、温度和氧化还原剂等对色素稳定性的影响.结果表明,光、温度、酸碱、Fe+3、Cu+2、H2O2和Na2SO3对荚膜红假单胞菌类胡萝卜素的稳定性均有较大影响,而金属离子Na+、Ca+2、K+、Zn+2与抗坏血酸对色素稳定性无影响.荚膜红假单胞菌类胡萝卜素在中性pH下、避光4℃冷藏,其稳定性较好. Distilled from Rhodopseudomonas capsulata, the carotenoid was used to research the stability under metal ion, temperature, oxidant and reducing agent. The results showed that the carotenoid was remarkably influenced by light, pH, Fe^+3 , Cu^+2 , H2O2 and Na2SO3, but Na^+ , Ca^+2 , K^+ , Zn^+2 and Vc had little effect on carotenoid. Preserved under 4℃, shade, neutral pH and obturation, Rhodopseudomonas capsulata carotenoid can keep stable.
